It’s no mystery that Mahi Mahi is one of the most delicious and popular fish to eat in America (and even worldwide… except for China… those folks are into some pretty weird things when it comes to seafood… weird things like “Salt and Pepper Pissing Shrimp, Shark Fin Soup, and Fish Maw Soup – fish maw is the internal swim bladder of a fish… I couldn’t make this stuff up! But I digress…)
In fact, I would be willing to bet the top 3 most popular fish consumed in American restaurants and homes are Grouper, Snapper, and Mahi Mahi.

The Main Takeaway: Always keep your dolphin (Mahi) on lots of ice before cleaning the fish. Not only does the ice keep the fish fresh, but cold fish meat is much easier to clean than a fish that has been sitting on the dock or in a warm live well.

3. Mahi Mahi Fish Tacos
If you don’t like fish tacos then I can only assume you hate puppies also…
I mean, who doesn’t like tacos stuffed with fresh fish?
Either way, with these Mahi tacos I will be sharing two different ways to prepare them.

Here are the notes and the step-by-step instructions for these Manly Mahi Tacos:
To add some flavor to my grilled Mahi Mahi fish, I use a marinade that consists of:
1/4 cup Fresh Lime Juice
2 TBS Oil (Olive, Vegetable, or Canola will work)
1 TBS Honey
1/4 tea cayenne pepper
pinch of salt
Whisk these ingredients together in a bowl. Place the Mahi Mahi fish in a zip lock bag and pour the marinade over it and place the bag in the refrigerator for 45min to 1 hour.
After 45 minutes remove the Mahi Mahi fish from the refrigerator and dust each side of the Mahi Mahi with the Blackened seasoning which consists of:
1 tablespoon sweet paprika
1 tablespoon sugar
2 teaspoons seasoned salt
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon ground cayenne pepper
2 teaspoons lemon pepper
1/4 teaspoon thyme
1/4 teaspoon oregano
1/4 teaspoon basil
1/4 teaspoon cumin
The cook time for Mahi Mahi is fast. And the trick to grilling perfect fish is to have a well-greased cooking surface.
Place the Mahi Mahi fish on the grate and set a timer for 1 ½ minutes, twist the fish a quarter turn. Time it for another 1 ½ minutes then give it a gentle turn to the opposite side. Set the timer for 1 ½ minutes once again. That’s when you glaze the grilled fish Mahi Mahi with a Honey Lime Glaze:
2 TBS Lime Juice
2 TBS Olive Oil
1 TBS Rice Wine Vinegar
1 TBS Honey
Salt and Pepper
Add the lime juice, vinegar, and honey to a bowl. While whisking slowly add the olive oil. Throw in a pinch of salt and pepper to balance the flavor.
After three more minutes the Mahi is ready to come off the grill and enjoy your grilled Mahi Mahi fish tacos.
