Ingredients
- 8 oz. (1 cup) 230 g (240 ml) cream cheese
- ½ cup 120 ml heavy whipping cream
- 3 tbsp 3 tbsp lemon juice
- ¼ tsp ¼ tsp salt
- 2 tsp 2 tsp pure vanilla extract
- 1⁄3 cup (1½ oz.) 80 ml (45 g) powdered erythritol
Garnish
- ½ cup 120 ml fresh blackberries (optional)
- 1 tsp 1 tsp lemon zestlemons zest (optional)

Making low carb simple
Instructions
Instructions are for 4 servings. Please modify as needed.
Use a hand mixer to whip the cream cheese and heavy cream until smooth and fluffy.
Add the lemon juice, vanilla, and salt. If you prefer a sweeter taste, add some erythritol. Continue whipping until well mixed and smooth.
Refrigerate for 30 minutes before serving.

I added all the zest from the lemon and a drop of lemon oil. I added Lakanto granulated monk fruit sweetener in addition to the erythritol and placed it over crushed pecans in a small mason jar. I only used 2 small shakes of salt (in my hand first) and added based on previous comments. Topped with blackberries upon serving and thought it delicious. Thank you for the recipe

Delicious & easy to make. I used more lemon juice & less sweetener, as keto has definitely dialed down our taste for sweetness. I used 4 tbls lemon juice & 2 tbls Lakanto monk fruit granulated sweetener, and texture & flavor great for us. The granulated sweetener mixed in fine and not grainy texture at all. Thanks for this yummy keto treat.

We love this recipe. We do omit the salt. Also add a packet or True lemon crystals. Top it off with a sliced strawberry and a few scrapes of sugar free chocolate or chips. Beautiful, and delicious

Tried this for a small party ...it went over great! several of the people are diabtic or on Keto...they really appreciated it.
I doubled the recipe and served it in very small containers topped with a blueberry and 2 raspberry and the lemon zest. Very pretty and tasty.Reply: #57

I thought the flavor was really good, but couldn't get it to fluff. I was surprised I didn't see one other person with this issue. I followed recipe exactly. What happened? I will say we all loved the taste, a little soupy but delicious. Like a very soft cheesecake.

Fabulous recipe. Have made it about four times now for guests coming round for dinner. It was just amazing, and not over-facing either. Don't understand why some struggle with aspects of it. I just did exactly as it said, and made sure the cream was really whipped, and I used British cream cheese which is not that salty, and I did use the exact amount of salt in the recipe. Just delicious, and so easy. Made it in the afternoon for four, and into the fridge. Then added the blackberries as suggested for three of the times, and raspberries for the fourth time as there were no blackberries available. It's certainly my ' go-to' pudding for guests.
