1 First, preheat your waffle iron. DO NOT SKIP THIS STEP! While the waffle iron is heating, beat your egg in a small bowl and add the mozzarella cheese, almond flour, Swerve, cinnamon, and vanilla.

2 Next, stir everything together well. Divide the mixture in half using a spoon to "cut" down the middle of the mixture. (This works best in a flatter bowl.)

3 After that, spread half of the mixture in your waffle iron and top with half of the berries. Cook for 5 to 7 minutes, until golden brown.

What sweeteners work in Keto Blueberry Chaffles?

This recipe isn't particularly fussy, so feel free to use whatever sweeteners you want. I used Swerve, but monk fruit or my latest obsession allulose would work great too! I don't have much experience with stevia, but I am sure that would work also.

What kind of maple syrup can I use on keto?

I am a big fan of Choc Zero products, as well a Lakanto.

Does it matter what waffle iron I use?

For the most success and ease, I recommend investing in the super-affordable Dash Mini Maker. BUT, I have made chaffles in my traditional waffle maker, and they came out great. I prefer the thinness that the dash offers, and also that a recipe makes two chaffles that perfect for sandwiches. (Not an issue with this recipe, but I am obsessed with making chaffles sandwiches.)

How long should I cook my chaffles?

I have found with the Dash Mini, cooking for 5 to 7 minutes is more. Don't use the light as a guide; instead, watch the steam and check them when the steam has dramatically reduced or stopped altogether. I am always tempted to take them off too early. But - you will be richly rewarded with a crispy chaffle for your patience.

Ingredients

  • 1 egg beaten
  • ½ cup shredded mozzarella cheese (I like finely shredded but I have used both just fine.)
  • 1 tablespoon almond flour optional
  • 1 tablespoon swerve
  • ½ teaspoon ground cinnamon
