Celeriac, also referred to as celery root, is not the root of the celery stalk but a crazy-cool root all its own. These recipes use celeriac root in interesting ways, so if you’ve got it at your Farmer’s Market or in your CSA share, you have no excuses anymore!

1. Celery Root Puree With Balsamic Roasted Beets and Pearl Onions
Celery root, when roasted and pureed, makes a silky dish somewhat similar to mashed potatoes, but much more nutritious. This one is made creamy with full-fat coconut milk and topped with caramelized pearl onions and deliciously healthy beets.

2. Easy Carrot Celeriac Spiralized Salad
This vegan and paleo salad is healthy, light, and super easy to make if you have a spiralizer. It’s also delicious and you can make it in under half an hour. You’ll need celeriac, carrots, Dijon mustard, apple cider vinegar, honey, lime juice, parsley, roasted pumpkin seeds, and a few other ingredients.

3. Sweet Celeriac Mash
This is the perfect way to introduce celeriac to your kids if you have picky eaters—you don’t even have to tell them what’s in it! This sweet mash is made with quince, olive oil, nutmeg, ginger, dried thyme, cinnamon, and salt/pepper. If you can’t find quince, try using an apple.

4. Low Carb Celeriac, Bacon, and Parmesan Rosti
This dish is essentially a souped-up hasbrown your whole family will be excited about. And it’s healthy! You can replace the parmesan cheese with nutritional yeast to make it completely dairy-free. But don’t forget that butter and bacon, honey, because that’s the best part.

Here’s another version of potato salad, and while this one is oodles healthier than the traditional version, it looks more like it, so you could easily fool your friends and family at a summer picnic into eating something more nourishing than the usual dishes.

7. Celeriac Mash
Looking for a dressed-up mash you could serve at a dinner party? This one looks fancy but it’s easy to make with celeriac, chicken stock, coconut milk, fresh thyme, garlic, ghee, salt, and freshly ground black pepper. The savory flavor will blow your guests away!

8. Truffle and Thyme Celeriac Fries
These baked fries are super delicious, and they’re a much healthier alternative to the standard deep fried white potato fries. You can make your own batch with celeriac root, truffle oil (this is the flavor secret), black truffle salt, lemon, and fresh thyme.

Detoxing doesn’t have to involve complicated and sometimes dangerous restrictions. This detox salad is absolutely delicious and satisfyingly crunchy with carrots, celeriac, cabbage, apple, saved almonds, pumpkin and sunflower seeds, lemon, olive oil, and a touch of maple syrup.

11. Garlic and Herb Celeriac Fries
Celeriac is more flavorful than white potatoes already, but you can take your fries to the next level with oregano, garlic, salt, pepper, and stalks of fresh rosemary. While your kids might love these fries, they are definitely not kiddie food—adults love them, too!

12. Cauliflower Celeriac Soup With Salmon Fillet

14. Lemon Garlic Shrimp With Celeriac Grits
Of course, these aren’t REAL grits. But if you miss that creamy southern dish, try this version made from celeriac and topped with a saucy lemon garlic shrimp using smoked paprika, chopped parsley, avocado oil, and black pepper. It’s super simple to make, too!

15. Celery Root and Parsnip Mashed “Potatoes”
This dish isn’t made with potatoes at all, but it might as well be, because it has a similar flavor and texture to mashed potatoes with grass fed butter, garlic, chicken stock, onion powder, chives, and nutmeg if you want. But it’s actually made from celeriac and parnsips!

16. Celeriac Remoulade and Smoked Trout Salad
This elegant salad is picnic-perfect and very easy, although it has a fancy appearance and name. You can make it with whole smoked ocean trout, celeriac, Spanish onion, capers, olive or macadamia oil-based mayonnaise, lemon juice, sea salt, and a bit of black pepper.

17. Celery Root and Apple Salad
Remember what I said about roots and apples? This salad also uses that combination with pistachios, pomegranate seeds, and parsley as the simple and easy base, drizzled with a honey dressing made with olive oil, white wine vinegar, salt, and pepper.

This salad is made with celeriac, apple, and celery stalks, which are, contrary to how it might sound, the top part of the celeriac root! You’ll also need olive oil, parsley, toasted walnuts, Dijon mustard, and apple cider vinegar or white wine vinegar for the dressing.

19. Cauliflower and Celery Root Puree With Sauteed Beet Greens
Simple purees and mashes, which might otherwise seem “boring” if you’re looking for something you can make into a meal, can be made more interesting by adding flavorful and nutrient-dense toppings. This mash is seasoned with fresh sage and includes yellow onions with the beet greens!

20. Bacon Wrapped Code With Celery Root and Apple Puree
See? This recipe purees apples right along with the celery root, giving it a sweetness that helps to balance out any bitterness or earthy flavor. As if that isn’t tasty enough, you then get to serve it with flaky cod wrapped in bacon and a side of crispy roasted Brussels sprouts.

22. Leek and Celery Root Soup
I’ve lately been a big fan of leeks—they’re almost like giant green onions and they add a fabulous flavor to dishes using potato or other root vegetables, including this soup with celeriac, thyme, black pepper, garlic, sea salt, and fresh lemon juice. Yum!

23. Celery Root Mash
This mash is full of healthy fats with the addition of coconut oil or fat of choice (bacon grease would probably be delicious) and coconut cream or coconut butter (coconut cream would have a smoother texture). Chicken stock is also an opportunity to add nourishing bone broth!

24. Simple Mashed Celery Root
We’ve got a lot of mash recipes on this list, but I’m including this one because it’s the simplest and has only three ingredients, so you really get a chance to appreciate the flavor of the celery root. All you need is celery root, coconut oil/ghee/butter, and sea salt and black pepper to taste.

25. Celery Root Rosti
This simple rosti/hash brown recipe has fewer ingredients than the last one I shared, so you can make it even if all you’ve got is celery root. You’ll need those guys, plus fat of choice for frying, salt and pepper to taste, and any topping syou want to add.

26. Celery Root and Cauliflower Puree With Garlicky Greens
I mentioned that toppings can help make mashes more interesting, but what I’ll say now is that mashes can also help make certain foods more palatable, like chard, for example. Chard can be a bit bitter, so if that turns you off, add some deliciously garlicky butter and serve it over celeriac and cauliflower puree!

27. Cream of Celery Root Soup
With chicken bone broth, dry white wine, grass-fed butter, and lots of garlic, this soup is both elegant and deeply nourishing. You don’t have to add the butter (it’s optional) but seriously, who in their right mind would leave out optional butter?!

28. Roasted Celeriac With Smoked Pancetta, Mushrooms, and Leek
Of all the celeriac recipes I’ve shared so far, this is the one that I most want to get started on right away. With the heartiness of celeriac, and savory flavors of leek, buttery butter, and sweet-and-smoky pancetta, why wouldn’t I be drooling all over my keyboard?

29. Shepherd’s Pie With Mashed Celeriac
Shepherd’s Pie is traditionally topped with mashed potatoes, but you can make a more paleo-friendly version using celeriac with pastured butter, ground lamb, onion, button mushrooms, carrots, garlic, celery stalks, broth, and more. Super delicious and healthy!

30. Paleo Waffle Hash Browns
I can’t help but share such a brilliant recipe, because this is my favorite way to make any kind of hash browns. The pressure from the waffle iron holds them together, so they bind a lot better than what I can do with the back of a metal spatula. Egg helps this one out, too!
